- Baked Citrus Salmon Directions: On a large greased cookie sheet layer salmon, sprinkle with seasonings and pour orange juice around the salmon. Bake in a preheated 425 degree oven for 15-20 minutes (depending on the thickness of the salmon). If your salmon is very thick (2” or more) you will need to bake 5 – 10 additional minutes. When salmon is cooked you will see a little bit of white coming out of the salmon. Be careful not to overcook. Allow to set about 5 minutes before cutting. Serve over saffron rice.
- Saffron Rice Directions: Over medium high heat bring water to a boil and add butter, salt and rice. Reduce to simmer and cook for 20 minutes. Allow to set about 10 minutes before serving.
- White Wine & Caper Sauce Directions: Melt butter and olive oil in sauté pan add the garlic and mix cook on medium high for about 1 – 2 minutes or until the garlic is cooked. Add parsley, salt, pepper, capers and white wine. Turn heat up to medium high and allow wine to cook off about 10 minutes. Be sure to mix frequently. Serve over salmon and serve immediately.
