Russian Tea Cookies

My son had a history paper due this week, so I had the pleasure of making something Russian for his class project and presentation. I was pleasantly surprised by this recipe, I changed it up a little. These "Russian Tea Cookies" were amazing . . . I would imagine that they would be great with tea or coffee. A great and simple Mother's Day cookie. Please try them and let me know what you think.

Ingredients
- 1 cup butter
- 1/2 cup powdered sugar
- 2 cups powdered sugar for dipping
- 2 1/4 cups Flour
- 1 teaspoon vanilla bean paste
- 1/4 teaspoon salt (omit if you are using salted butter)
- 2 tablespoon hot water
Instructions
- Preheat oven to 400 degrees, lay parchement on cookie sheet. Combine, butter, vanilla, salt and powdered sugar, and mix well, gradually add flour, finally add hot water to help dough bind. Roll dough into one inch balls. Making 36 - 48 cookies, lay them about 1 inch apart on the cookie sheet. They will all fit on one large cookie sheet. Bake 12 minutes or until cooked, do NOT brown. Remove from oven and begin dipping into the 2 cups of powdered sugar. Dip quickly, because the sugar sticks to the warm cookies, then dip a second time to add the final layer of powdered sugar. Serve immediately.
