Chipotle Salsa

Here is my latest creation – Chipotle Fire Roasted Salsa. Living here in the southwest we get to try all types of salsa. My favorite thing to do is to try and duplicate my favorite salsa. I love homemade salsa and it is a favorite snack at Casa Linda, as you can imagine. My entire family loves snacking on chips and fresh salsa. This salsa was inspired by some salsa I had in California. It was in a jar and it gave me the idea to try salsa with chipotle chilies in adobe sauce which gives the salsa a smoky flavor and adds a depth of flavor to my regular salsa. The hubby loves it, I think most men love smoky flavored foods. I served it at a dinner party and it was a hit – so here it is my newest creation, Chipotle Fire Roasted Salsa! Ingredients
- 2 (12 ounce) cans Fire Roasted Tomatoes
- 1 Clove of Garlic, peeled and chopped
- ¼ of medium white onion, chopped
- 1 Small Bunch Cilantro (leaves only)
- 3 Chipotle Chilies in Adobe sauce (stems removed)
- 2 Tablespoons Fresh Lime Juice
- Salt to Taste
Instructions
- Add one can have fire roasted tomatoes, garlic, onion, chipotle chilies, into food processor. Chop until well blended. Add cilantro, salt, lime juice and second can of tomatoes and pulse until chunky. Serve immediately or store in air tight container for several days in refrigerator.
