
Mixed Berry & Coconut Scones with stone ground organic whole wheat flour and ground flax seed. Making the recipe healthier than your average scone recipe.


- 2 cups whole wheat flour
- ½ ground flaxseed
- 1 ½ cups dried mixed berries
- ½ cup shredded coconut
- 2 teaspoons baking powder
- ¼ teaspoon baking soda
- 1 stick of butter chopped into small pieces
- ½ cup heavy cream
- ¼ cup sugar
- ¼ teaspoon cinnamon
- Pinch of salt
- 1 egg (beaten well for egg wash)
- Directions: In large mixing bowl add all dry ingredients; then add butter and cream, mix until dough forms small balls then add dried fruit, coconut and raisins. Form dough ball and knead in mixing bowl with your hands until all chunks of butter are well blended. Flour your cutting board and divide dough in half, roll out dough into two circles. Dough should be about ½ thick. Cut into pie slice shapes. Place on a greased cookie sheet. Coat scones with egg wash and bake at 375 degrees for 18 –22 minutes. Scones are delicious for breakfast or as an afternoon snack with tea!
