Italian Delight - An Appetizer

If you are anything like me, I am always looking for easy and interesting appetizers. Easy being the key word here. I usually put most of my cooking efforts into the main dish. I do love a great appetizer.This fun appetizer was inspired and made by my "Neighbor Joe". He sent some over for me to sample and they were soooo . . . good I wanted to share them with you. As you can see by the presentation they are beautiful and taste just a good as they look. It is basically a Pasta Salad on a Stick, but what a fun and playful appetizer this makes. Ingredients
- 2 cups cook tortellini
- 24 Kalamata Greek Olives
- 24 Mini Plum tomatoes
- 24 bite size peices of mozarella cheese
- 2 tablespoons chopped parsley for garnish
- Basil Vinaigrette
- ¼ cup olive oil
- ¼ cup white balsamic vinegar
- 1 teaspoon Dijon mustard
- 1 teaspoon prepared pesto sauce
- Fresh ground pepper and salt to taste
Instructions
- Cook pasta according to package directions. Empty into a large mixing bowl and add basil vinaigrette. Add tomatoes, olives, and cheese. Toss lightly. Using a wooden skewer, alternate adding tomato,tortellini, and cheese, and alternate again this time ending with a Kalamata olive. As shown in the picture above or below. Garnish with fresh chopped parsley. Serve immediately or refrigerate for up to 24 hours before serving.
- Dressing: In small mixing bowl add all ingredients and mix well until all ingredients are fully incorporated.
