Caprese Salad with Basil Vinaigrette

Caprese Salads are simple and delicious. In Italy they are on every menu of nearly every trattoria. They are perfect in summer because the tomatoes are fresh and amazing. I especially enjoy making this recipe with heirloom tomatoes because of their vibrant colors. Today I was working on a photo shot for my cookbook and bought these beautiful tomatoes, I had some fresh basil so I couldn’t help but think about making a simple caprese salad for dinner. Typically you can use an aged balsamic vinegar and some extra virgin olive oil, but I already had a little basil vinaigrette left over so from the night before, so it was the perfect pairing for this fresh and tasty summer caprese salad. A fresh basil leaf really makes this beautiful and I love basil especially when it is fresh and right out the of the garden, it tastes extra good!

Ingredients
- 6 slices mozzarella cheese
- 1 large tomato
- 6 basil leaves
- Basil Vinaigrette
- ¼ cup olive oil
- ¼ cup white balsamic vinegar
- 1 teaspoon Dijon mustard
- 1 tablespoon prepared pesto
- Fresh ground pepper and salt to taste
Instructions
- Dressing: In small mixing bowl add all ingredients and mix well until all ingredients are fully blended.
- Assembly: Layer tomatoes, mozzarella cheese and fresh basil leaves. Season with salt and pepper and drizzle with vinaigrette and serve.
