Chocolate Chip Cookies

I had to help Katherine bake cookies for her class last night. And I had to really think about it, when was the last time I baked chocolate chip cookies. It has been a few years. I use to make Chocolate Chip Cookies all the time for my husband and the kids. The love homemade chocolate chip cookies. A few years ago I started watching my sugar intake, so I cut way back on the sweets. You probably notice I don't post a lot of desserts. I do love a great homemade cookie every now and then, but they love me right back in all the wrong places, if you know what I mean. I do think that a really good recipe for chocolate chip cookies is a treasure. I pulled out my old recipe and swamped out the vanilla extract for vanilla bean paste. I love the stuff, those tiny vanilla beans make everything taste better. And these cookies are no exception, they were all in two days. Ingredients
- 2 cups (12 ounces semi-sweet Chocolate Chips)
- 2 1/4 cups flour
- 1/2 teaspoon baking soda
- 1 teaspoon salt
- 1 cup unsalted butter, softened
- 3/4 granulated sugar
- 3/4 brown sugar
- 1 1/2 teaspoon vanilla bean paste (or vanilla extract)
- 2 large eggs beaten
Instructions
- In large mixing bowl beat eggs until blended, add granulated sugar, brown sugar, vanilla bean paste and butter.
- Using a mixer on medium speed, mix until ingredients are blended about 1 minute, gradually add in the flour along with the baking soda.
- Mix on medium speed for about one minute or until the dough is fully mixed and all ingredients are combined.
- Finally fold in the chocolate chip.
- Preheat oven to 350 degree and spoon dough onto a greased cookie sheet using a teaspoon.
- Bake 12 to 16 Cookies per large cookie sheet.
- Bake for 10 - 14 minutes.
- For soft chewy cookies 10 - 12 minutes
- For slightly crispy cookies 12 - 14 minutes.
- Makes about 3 dozen cookies.
