Simple Apricot and Coconut Scones

I love scones with coffee or with tea. These are simple to make and in under thirty minutes you can have fresh baked scones in your very own kitchen. Follow these simple steps . . . and enjoy these tasty treats with your morning cup of coffee. Warning they go fast . . . if you have kids you probably should hide a few otherwise they will be all gone in a flash. No joke even my dog Buster enjoyed one - without my permission of course. Ingredients
  1. 1/2 cup brown sugar
  2. 1 teaspoon vanilla bean paste or vanilla extract
  3. 1/2 cup heavy cream + 1 or 2 tablespoons
  4. 2 1/2 cups flour
  5. 2 teaspoons baking powder
  6. 1/4 teaspoon baking soda
  7. 1 stick salted butter
  8. 1 cup dried apricot, chopped
  9. 1 cup coconut flakes (unsweetened)
  10. 1 egg, beaten
Instructions
  1. In a large mixing bowl add sugar, vanilla and heavy cream.
  2. Mix well.
  3. Add flour, baking powder, baking soda, chopped butter, apricot, and coconut flakes.
  4. Mix until the butter is fully incorporated into the dough.
  5. Form large ball of dough.
  6. Knead dough on a floured surface, for about one minute.
  7. Form into flat round cake like shape.
  8. Cut into desired slices.
  9. Transfer to a parchment lined cookie sheet. (or a slightly greased cookie sheet)
  10. Gently coat scone slices with egg wash.
  11. Bake in a preheated 375 degree oven for 18 - 20 minutes or until lightly browned.
  12. Allow to cool slightly before serving.
