Easy Tortilla Soup

Tortilla soup is such a nice treat on a cool evening. My children love homemade soup. This is a easy soup to make during the week. What is great is that is great for leftovers the next day for lunch or served with a side salad again for dinner. Ingredients
- 2 Tablespoons olive oil
- 2 cups fire roasted sweet corn (Trader Joes)
- 1 red bell pepper; split and seeded, chopped
- 2 cup roasted chicken, chopped
- 1/2 teaspoon cumin
- 1 can black beans, drained and rinsed
- 1 teaspoon poultry seasoning
- Salt to taste
- 1 medium onion; chopped
- 3 cloves garlic; chopped
- 1 Tablespoon Masa
- 1 to 2 chipotle chilies in adobo sauce; chopped finely
- 1 (12 ounce) can petite diced tomatoes
- 3 cups chicken stock
- 1 cup shredded cheddar or pepper jack cheese
Garnishes
- 2 scallion; chopped
- 3 tablespoons cilantro; leafs only
- 1 ripe but firm avocado; diced
- Lime wedges
- Tortilla strips
Instructions
- In large cast iron pot add olive oil, onions and red peppers cook on medium high heat; cook until slightly charred. Mix often to make sure they char evenly. Add in garlic and roasted corn. Reduce heat to medium and add chicken stock, black beans and diced chicken. Season with poultry seasoning, cumin, masa, salt, add chipotle peppers and tomatoes. Simmer on low heat for 30 minutes. Remove from heat. Garnish and serve.
