Hearty Kale Chicken Soup

I know it seems strange to eat hot soup in the summer, but sometimes I just crave a good bowl of soup. My friend Laura in Kansas City is the same way. Our husbands laugh and poke fun of us because we enjoy a good bowl of soup when it is 90 degrees outside. All I know is it was good and very satisfying. I made some for the neighbor who just was in the hospital, but when I came back after my walk there was nothing left in the pot. The neighbor didn't get any soup because my family ate it all. When I find an empty pot, that is always a sure sign that it was good. So here you have it Hearty Kale Chicken Soup with white beans and lot of chunky vegetables. Please let me know what you think. Ingredients
- 2 tablespoon olive oil
- 1/2 cup sweet onion, diced
- 2 stalks celery with greens, sliced finely
- 3 carrots, sliced
- 1/2 teaspoon rubbed sage
- 8 cups water (or chicken stock)
- 1/2 teaspoon garlic powder
- 1/2 teaspoon dried thyme
- 1 teaspoon Italian seasoning
- 1 teaspoon dried chives
- 2 cans navy beans with juice
- 2 cups kale chopped, stem removed
- 1 cup frozen sweet corn
- 1 cup frozen sweet peas
- 2 cup roasted chicken, chopped
- 2 tablespoon Worcestershire sauce
- Salt and Pepper to taste
Instructions
- Place olive oil in pot, sauté onion, celery and carrots for about 5 minutes. Then add in the rubbed sage mixing continually for about 30 seconds or until the herb in lightly toasted and the smell permeates the dish. Then add the water or chicken stock, the remaining dried spices, beans, kale, corn, peas, roasted chicken, Worcestershire sauce and mix until blended. Season with salt and pepper. Cook on medium heat for 30 minutes. Serve immediately.
