- 2 cups butter pretzels
- 1 package caramel, cut in half
- 1 cup chopped peanuts (or your favorite nut)
- 2 - 3 cups melted chocolate wafers
- 1 cup white or milk chocolate wafers
- Layer the cookie sheet with parchment paper. Place pretzels on cookie sheet and place caramel pieces on each square. Put in a 250 degree heated oven for 5 minutes or until caramel is slightly melted. Watch carefully not to over-heat. Remove from oven and let cool about 10 minutes. Meantime heat 2 cups dark chocolate melting wafers in microwave for 45 seconds. Stir and heat again for another 45 seconds. Mix well until runny. Microwaves vary on heat so you may have to heat a third round for 30 – 45 seconds. The chocolate is ready when it runs off the spoon easily. Careful not to overheat! Drizzle chocolate over pretzel and caramel. Immediately sprinkle nuts over hot chocolate. Slightly shake cookie sheet so nuts sink down into chocolate. Allow to cool about 15 minutes or until chocolate has a matte finish. Then melt 1 cup white chocolate for 30 seconds in microwave mix and heat again for another 30 seconds or until runs off spoon. Drizzle white chocolate over dark chocolate spooning carefull to cover the tops of each pretzel. Allow to cool 15 minutes. Break into bite size pieces and place into airtight container to store.
- You can add more chocolate if you like. I do like to see some of the pretzel showing, so I don't cover the entire layer with the melted chocolate.
During the holidays I find that I enjoy giving small homemade gifts. I try to mix it up a little each year. This is a new take on something I created last year – the Pretzel Caramels. This year I made it into bark and added peanuts. But you can use your favorite nut, I think pecans or cashews would be great in this recipe.
