Chile con Queso Mexicano

I recently took a trip to the border city of El Paso, Texas. My good friend Bob, recommend a great restaurant for dinner. So my family drove – for what seemed like miles and miles to go to the great Mexican Restaurant called Julio’s Café Corona. I figured it must be really good since she is a native of El Paso. Well if was a great choice. For an appetizer I ordered Chile con Queso. When it arrived at the table I was surprised to see if was very different than the Chile con Queso I am use to eating in New Mexico. Our Chile con Queso is usually a saucy yellow cheddar with green chilies and tomatoes. This was basically layered sautéd onions, mild chile peppers and tomatoes covered in melted white cheddar cheese. I of course, always ask for the recipe, so the waiter sent the chef to our table and he kindly explained to me how to prepare Chile con Queso. So here it is – authentic Mexican Chile con Queso. It is fabulous . . .

Ingredients
- Chile con Queso
- 4 Roma Tomatoes, chopped coarsely
- 1 Pablano Peppers, seeded and chopped (you can substitute Anaheim Chile Peppers)
- 1 Small Onion, chopped
- 1 tablespoon olive oil
- 4 cups white cheddar cheese, shredded
Instructions
- In large sauté pan over medium low heat add olive oil, chopped pablano peppers and onions. Sauté for about 10 minutes and then add the tomatoes. Sauté for another 10 minutes mixing frequently to prevent burning. Continue to cook until the peppers are tender another 10 minutes. Transfer to serving dish. Add 4 cups of white sharp cheddar cheese and bake at 450 on top oven rack for about 3 – 5 minutes or until you see it bubbling and turning light brown. Remove and serve immediately with tortilla chips.
