Salmon, Safron Rice & White Wine Sauce

Salmon is one of our family’s favorite meals. It is so easy to make and I have a ton of FUN changing the way I prepare it. This recipe is by far one of my favorite recipes! When I eat it I feel like I am in a fine restaurant. The saffron rice gives this dish a beautiful color and a mild taste of saffron. The caper sauce is mild yet light enough to not interfere with the taste of the salmon. My children love this dish and I am sure your family will love it too. This is also a great meal for a romantic party of two. I have a great recipe for the left over salmon so don’t worry nothing will go to waste. I like serving this with a nice light wine – I prefer a Sauvignon Blanc (and you can use the same wine in the sauce). This is a great recipe, I hope you enjoy it.

- Baked Citrus Salmon Directions: On a large greased cookie sheet layer salmon, sprinkle with seasonings and pour orange juice around the salmon. Bake in a preheated 425 degree oven for 15-20 minutes (depending on the thickness of the salmon). If your salmon is very thick (2” or more) you will need to bake 5 – 10 additional minutes. When salmon is cooked you will see a little bit of white coming out of the salmon. Be careful not to overcook. Allow to set about 5 minutes before cutting. Serve over saffron rice.
- Saffron Rice Directions: Over medium high heat bring water to a boil and add butter, salt and rice. Reduce to simmer and cook for 20 minutes. Allow to set about 10 minutes before serving.
- White Wine & Caper Sauce Directions: Melt butter and olive oil in sauté pan add the garlic and mix cook on medium high for about 1 – 2 minutes or until the garlic is cooked. Add parsley, salt, pepper, capers and white wine. Turn heat up to medium high and allow wine to cook off about 10 minutes. Be sure to mix frequently. Serve over salmon and serve immediately.
