Halloween Pasta Salad loaded with lots of delicious things like petite heirloom tomatoes, cucumbers, black beans, roasted corn, petite sweet peas, fresh basil and roasted pumpkin seeds. You will also love the balsamic vinaigrette - great for everyday salads. Happy Halloween! Cecelia

Ingredients
- 1 (16 ounce) Halloween Pasta
- 1 (15 ounce) can black beans, rinsed and drained
- 1 1/2 cup petite heirloom tomatoes
- 1 cup cucumber, sliced
- 1 cup petite peas, thawed
- 1 cup roasted corn, thawed
- 1/4 small red onion, diced finely
- 2 tablespoons, fresh basil diced
- 1/4 cup roasted pumpkin seeds (add right before serving)
Balsamic Vinaigrette
- 1/3 cup olive oil
- 1/4 cup balsamic vinegar
- 1/2 teaspoon sea salt
- 1/4 ground black pepper
- 1/4 garlic powder
- 1 tablespoon Italian seasoning
- 1 teaspoon Dijon mustard
Vinaigrette
- Add all ingredients into small mixing bowl.
- Mix until fully combined.
- Refrigerate until ready to use.
Pasta Salad
- Cook pasta according to package directions.
- Drain and add into large pasta serving bowl.
- Add tomatoes, cucumber, peas, corn, beans, red onion, and basil.
- Top with Vinaigrette.
- Mix well.
- Refrigerate for 2-6 hours.
- Add pumpkin seed.
- Stir and serve.
Notes
- Add the pumpkin seed right before serving. This will prevent them from getting soft.
