Southwestern Rice Bowl

My kids love this meal. It includes all the fixings for some really awesome tacos, except without the all the extra fat. It is perfect because, my favorite food is salad, so this recipe in my opinion is the perfect meal. My husband and son get plenty of their lean protein from the extra lean ground beef, and I get my salad with lots of great extras like fresh made easy guacamole (see link below) and fire roasted chipotle salsa (see recipe link below). You really can’t go wrong with this meal. And if you love your tortillas and can't live without them, all of these awesome ingredients go well wrapped up in a large warm flour tortilla to make a over stuffed burrito. I actually made stuffed burritos the second night with the leftovers and they were well appreciated by my hungry children. (They had now idea they were leftovers.) For the burritos I did add some sour cream and made a fresh batch of easy guacamole. Two great dinners and I only made one mess. You have got to love that! Ingredients
- 1 pound extra lean hamburger meat
- 2 tablespoons taco seasoning
- 1 (12 ounce) can of black beans, rinsed and drained
- 1 cup frozen sweet corn, thawed
- 1 cup cheddar cheese
- 2 cups cooked white or brown rice
- 2 cups iceberg lettuce chopped
- 1 medium tomato, diced
- ½ cup fresh cilantro, roughly chopped
Instructions
- In a large skillet fry the hamburger meat over medium high heat and season with the taco seasoning. While the meat is cooking prepare the rice, beans, lettuce and tomato. Layer lettuce, taco meat, rice, beans, corn, tomatoes, and shredded cheese. Garnish with cilantro, guacamole and salsa. Serve immediately.
Notes
