
Southwestern Rice Bowl Recipe – Easy and Delicious! | www.ceceliasgoodstuff.com


- 1 pound extra lean hamburger meat
- 2 tablespoons taco seasoning
- 1 (12 ounce) can of black beans, rinsed and drained
- 1 cup frozen sweet corn, thawed
- 1 cup cheddar cheese
- 2 cups cooked white or brown rice
- 2 cups iceberg lettuce chopped
- 1 medium tomato, diced
- ½ cup fresh cilantro, roughly chopped
- In a large skillet fry the hamburger meat over medium high heat and season with the taco seasoning. While the meat is cooking prepare the rice, beans, lettuce and tomato. Layer lettuce, taco meat, rice, beans, corn, tomatoes, and shredded cheese. Garnish with cilantro, guacamole and salsa. Serve immediately.
