Fish Tacos

Who doesn't love an easy delicious and light dinner option. I love fish tacos and so does my family. Some nights I am just too tired to cook a full dinner from scratch. This is one of my favorite easy go to meal options. I use frozen fish sticks to make fish tacos and add prepackaged coleslaw with spicy mayonnaise. The only thing that takes a little extra effort is the Roasted Corn and Tomato Salsa (see previous post for recipe). This is a delicious option and your family will go crazy over it. My son Nicholas said is was his favorite taco ever! So there you go - whenever I hear that - I must share my recipe with you all! Ingredients
- 16 Frozen Fish Sticks
- 8 corn tortillas
- Roasted Corn & Tomato Salsa (see previous post)
- 6 ounces prepackaged Cole Slaw
- 1/4 cup mayonnaise
- 1 teaspoon chile powder
- Cilantro for garnish
- Fresh lime sliced for garnish
Instructions
- Cook Fish Stick according to package directions. Warm corn tortillas over grill and store in tortilla warmer until you are ready to assemble tacos.For coleslaw mix prepackaged slaw with mayonnaise and chili powder. Layer tortilla, fish sticks, roasted corn and tomato salas and coleslaw. Garnish with fresh cilantro leaves and fresh lime.
