
I am always looking for ways to improve recipes. This is a new and improved recipe for a simple sugar cookie. The dough does not require refrigeration making it easy to work with and more timely. This recipe makes for some tasty light weight sugar cookies just in time for the for the holidays. The secret is in the extract combination of vanilla and almond extract. I hope you enjoy it.
Best Ever Sugar Cookie Recipe

- 2 ½ cups all-purpose flour, sifted
- 1 teaspoon baking powder
- 1 teaspoon vanilla extract
- 1 teaspoon almond extract
- 1 cup salted butter, 2 sticks
- 1 ½ cup granulated sugar
- 1 large egg, beaten
- 3 cups powdered sugar
- 3 tablespoon milk
- 1 teaspoon fresh lemon juice
- Food coloring as desired.
- Sprinkles as desired.
- Preheat oven to 375 degrees F.
- In a medium mixing bowl sift flour and baking powder.
- Set aside.
- In a large mixing bowl cream butter and sugar for about 2 minutes on medium high speed.
- Add beaten egg and vanilla and almond extract.
- Mix until combined about 30 seconds.
- Mix in flour and baking powder mixture while mixing on medium speed.
- Scoop dough into ball and divide into two equal balls.
- On a floured surface roll out dough and cut out cookie shapes.
- Line cookie sheets with parchment paper or silicone liners. (Important to prevent sticking)
- Place cut out cookies onto cookie sheet about 2 inches apart.
- Bake for about 8 minutes or until lightly browned. (And I do mean lightly browned.)
- Repeat for second batch.
- Allow to cool before icing.
- Decorate as desired.
- This recipe makes about 3 dozen cookies, depending on size of cookie cutters.

Taking the step out of refrigerating the dough saves hours in making a fabulous batch of sugar cookies. The dough stays nice and firm and doesn’t fall apart like so many other recipes I have experimented with. You will love these light and airy sugar cookies.

This recipe makes about 3 dozen cookies depending on the size of the cookie cutter. I made two batches for about 6 dozen cookies. It also helps to roll out the dough to about 1/4 inch in thickness for a light delicate cookie. We had a bunch of kids helping to decorate them. So I didn’t have the best opportunity to decorate them. But we had a great time getting together. I just love spreading holiday cheer.

A Simple Sugar Cookie Recipe
The icing drys quickly so make sure to sprinkle and decorations on right away to make sure they stick to the icing. Katherine made this cute little Panda! I recommend sharing the recipe when you give these away as a gift. The receiver will be very grateful.

The cookies can be stored in an airtight container for up to 4 days. I don’t recommend storing them longer than that otherwise the icing gets a little sticky.
