Simple No Refrigerate Sugar Cookies

This is a simple sugar cookie recipe. The dough does not require refrigeration making it easy to work with. This recipe makes a simple and tasty light weight sugar cookie great for the holidays, Valentine's Day, Easter, Passover or Mother's Day. The secret is in the extract combination of vanilla and almond extract. I makes a very tasty cookie that is soft and moist.

Sugar Cookies
- 2 ½ cups all-purpose flour, sifted
- 1 teaspoon baking powder
- 1 teaspoon vanilla extract
- 1 teaspoon almond extract
- 1 cup salted butter, 2 sticks
- 1 ½ cup granulated sugar
- 1 large egg, beaten
Icing
- 3 cups powdered sugar
- 3 tablespoon milk
- 1 teaspoon fresh lemon juice
Garnish
- Food coloring as desired.
- Sprinkles as desired.
Instructions
- Preheat oven to 375 degrees F.
- In a medium mixing bowl sift flour and baking powder.
- Set aside.
- In a large mixing bowl cream butter and sugar for about 2 minutes on medium high speed.
- Add beaten egg and vanilla and almond extract.
- Mix until combined about 30 seconds.
- Mix in flour and baking powder mixture while mixing on medium speed.
- Scoop dough into ball and divide into two equal balls.
- On a floured surface roll out dough and cut out cookie shapes.
- Line cookie sheets with parchment paper or silicone liners. (Important to prevent sticking)
- Place cut out cookies onto cookie sheet about 2 inches apart.
- Bake for about 8 minutes or until lightly browned. (And I do mean lightly browned.)
- Repeat for second batch.
- Allow to cool before icing.
- Decorate as desired.
- This recipe makes about 3 dozen cookies, depending on size of cookie cutters.
