Easy Holiday Acorn Cookie

The holiday season as sneaked up on us again. How does that happen?! I started shopping about a month ago. Then all of a sudden life just got so busy that I didn't have time to finish. The story of my life, I always have the best of intentions. Seriously, I do . . . then work get's busy and I fall behind on everything. It is a good thing that my book is going to available this week, I think it will be my gift to nearly everyone. My kids and husband might complain a bit though. (Ha, ha, ha . . . I think I better finish shopping for them.) During the busy holidays, I am always looking for easy go-to recipes, especially when life gets hectic. The librarian at my daughters school sent me some holiday cookie ideas. This little fall dessert cookie was among them. Acorns are more of fall item, but when you make them with this holiday peppermint kiss, you have the perfect holiday cookie. This is the way to go, if you need something quick and easy for a holiday party. This simple recipe for "Holiday Acorn Cookies" is a winner. They must of been good because they were gone in a blink of an eye. I didn't get even one sample to try. I swear that the cookie monster lives at my house. Ingredients
- 1 package mini peanut butter cookies
- 1 package holiday peppermint kisses
- 1 cup melting chocolate wafers
Instructions
- Line cookie sheet with parchment paper. Line up the peanut butter minis in rows. Melt chocolate wafers in microwave for 30 seconds, stir wafer and and heat again until the chocolates is smooth and creamy. Do not overheat, the chocolate will get hard and unmanageable. (30 seconds for 2 - 3 rounds is perfect.) Add chocolate to each mini peanut butter, about 4-6 at a time, then top with kiss. Continue until all 36 cookies are covered with chocolate and a kiss. Allow to cool at least 20 minutes before serving.
Notes
- FYI - You can top with a chocolate chip to have more of a finished cookie, but I didn't have any on hand.
