
It is true here in New Mexico we add our state’s Hatch Green Chile to everything! Including my newest creation for a Spicy Southwestern Coleslaw with Green Chile Ranch Dressing to some it might sound odd – but let me tell you it is FANTASTIC!
Spicy Southwestern Coleslaw with Green Chile Ranch Dressing

- 3 cups cabbage shredded
- 1.5 cups carrots shredded
- 1/8 small red onion, sliced
- 1/4 cup cilantro, chopped
- 1 cup buttermilk ranch dressing (Hidden Valley buttermilk recipe)
- 1 (4 ounce) can Hot Hatch Roasted Green Chile - diced
- 1/2 cup cilantro leaves - loosely packed
- Add ranch dressing, green chile and cilantro into min food processor or blender.
- Mix until fully combined. (About one minute.)
- Shred cabbage.
- Shred or julienne carrots
- Slice red onion.
- Chop cilantro.
- Add all ingredients into medium mixing bowl.
- Top with 1/4 cup green chile ranch dressing.
- Mix and serve.
- Refrigerate any leftover dressing for up to one week.

This southwestern Coleslaw is tasty! Made with a Spicy Hatch Green Chile buttermilk ranch dressing. Eat the slaw alone it alone of add it to a sandwich for a crunchy and spicy bite. Either way you are going to LOVE it!

This is my new favorite Coleslaw recipe. The secret is the buttermilk ranch dressing. I used the Hidden Valley Buttermilk package with mayo and real buttermilk. In my opinion it is 100 times better than a bottled ranch dressing! I hope you will enjoy my latest creation.

Coleslaw is always the perfect addition to a sandwich. It adds freshness and a crispy bite! I added the slaw to a corn beef sandwich. I was fantastic! Just writing about it now makes me crave one!
