Spicy Coleslaw with Green Chile Ranch Dressing

A very simple slaw made with only four ingredients. But what makes this southwestern slaw so special is the spicy green chile ranch dressing. It make this one tasty coleslaw! And it is the perfect addition to any sandwich - including the corn beef sandwich shown below!

Coleslaw
- 3 cups cabbage shredded
- 1.5 cups carrots shredded
- 1/8 small red onion, sliced
- 1/4 cup cilantro, chopped
Dressing
- 1 cup buttermilk ranch dressing (Hidden Valley buttermilk recipe)
- 1 (4 ounce) can Hot Hatch Roasted Green Chile - diced
- 1/2 cup cilantro leaves - loosely packed
Dressing
- Add ranch dressing, green chile and cilantro into min food processor or blender.
- Mix until fully combined. (About one minute.)
Coleslaw
- Shred cabbage.
- Shred or julienne carrots
- Slice red onion.
- Chop cilantro.
- Add all ingredients into medium mixing bowl.
- Top with 1/4 cup green chile ranch dressing.
- Mix and serve.
Notes
- Refrigerate any leftover dressing for up to one week.
