Kale with Cranberries and Goat Cheese
2015-01-26 10:46:08
You all know how much I love kale. I came up with another wonderful “Kale Salad” with cranberries, goat cheese and pistachio nuts!
Festive and beautiful, just in time for the holidays. My favorite thing about kale, unlike most lettuce this hardy green does not get soggy. If you are entertaining and need a salad that will hold up for hours – this should be your salad of choice.
The perfect pairing for this salad a beatiful cranberry vinaigrette! Please let me know what you think. I would love to hear from you. Post your comments below or send me a note on Facebook or Google.

Ingredients
- 1 (6 ounce) bag of organic chopped kale mix (Trader Joes)
- 4 ounces goat cheese; broken into small chunks
- 1 cup sweet peas
- 1 cup dried cranberries
- 1 cup pistachio nuts
- Cranberry Vinaigrette
- ¼ cup olive oil
- ¼ cup red wine vinegar
- 1/2 cup cranberry apple butter (Trader Joes)
- 1 teaspoon Dijon mustard
- 1 teaspoon Italian Seasoning
- ¼ teaspoon garlic powder
- 1 teaspoon sea salt
- Fresh ground pepper to taste
Instructions
- In small mixing bowl add all ingredients and mix well until all ingredients are well blended.
- Salad assembly: layer kale salad mix, cranberries, peas, goat cheese and pistachio nuts. Drizzle with dressing, toss well and serve immediately!
Notes
- Salad can be made up to one day ahead of time. Reserve the dressing in an air tight container and cover salad with plastic wrap. Make sure it is air tight! Air is what causes salads and vegetables to wilt.
