Gingerbread Cookies

These Gingerbread Cookies are so tasty and are the perfect holiday cookie! Whether you want to make gingerbread men or just quick and easy cookies, this recipe is a must try! I like my cookies soft in the middle so if you like them soft and chewy cut the baking time down closer eight minutes. If you are baking gingerbread cookies to decorate you might want to bake them slightly longer. I baked about 36 cookies and they were gone in two days – just tells you how good they are! Ingredients
- 3 cups all-purpose flour
- 3/4 cup firmly packed brown sugar
- ½ cup molasses
- 2 teaspoon vanilla extract
- 1 egg
- 1 tablespoon ground ginger
- 1 ½ teaspoons baking powder
- 1 ½ teaspoons cinnamon
- 1/2 teaspoon salt
Instructions
- Heat oven to 375°F. Spray cookie sheets with nonstick cooking spray or use parchment paper to line cookie sheet. In large bowl, combine brown sugar, eggs, vanilla, molasses; beat until light and fluffy about 2 minutes. Add flour, baking powder, cinnamon, ginger and salt; mix well. One dough is mixed allow to sit at room temperature for at least 2 hours. Divide into four equal portions and roll out and cut. Bake in oven at 375°F for 8 – 12 minutes or until edges are golden brown.

Any brand of molasses would be fine, Bud. I love ginger too. A little extra ginger couldn’t hurt. Happy Holidays!
