
Mediterranean Spinach Salad with an easy homemade balsamic Feta Vinaigrette
Healthy doesn’t get much better than this, especially with a salad topped with this amazing balsamic Feta vinaigrette. It is rich and delicious and pairs perfectly with this salad. Caution: don’t use too much as it is loaded with flavor and you don’t want to drown the poor salad in it’s richness.

- 6 ounces baby spinach
- 1/2 cup Sunflower seeds
- 1 cup Garbanzo beans, drained and dried
- 1 Roma tomato, diced
- 1 Persian cucumber, chopped
- 1 small yellow bell pepper, chopped
- 1 cup black olives, drained
- 1 cup Feta Cheese, crumbled
- 1 large ripe but firm Avocado, diced
- 1/4 cup olive oil
- 1/3 cup balsamic vinegar
- 1/4 crumbled Feta cheese
- 1 teaspoon whole grain mustard
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 1/2 teaspoon dried oregano
- In a large tray layer spinach.
- Then line sunflower seeds, garbanzo beans, tomatoes, cucumber, bell pepper, olives, Feta cheese and avocado. (See picture for a visual aid.)
- Drizzle with balsamic dressing and serve.
- Enjoy!

Mediterranean Salad with Balsamic Vinaigrette
I mentioned in the notes that you could easily put this in a giant salad bowl and toss. I was going for a visual presentation and I drizzled the dressing over the beautifully layered veggies. I served it into 6 small salad plates with chicken as a main course. If making this salad as a meal it will easily feed about 3 – 4 people you might want to add some grilled chicken for extra protien.

Balsamic Feta Vinaigrette perfect for any salad! Homemade dressings are so worth the extra effort and seriously it probably took all of 5 minutes to prepare. I usually make my a red wine vinaigrette for a Greek or Mediterranean Salad. I was fresh out of red wine vinegar so instead I opted for a balsamic vinegar and it was a nice change. Because the balsamic vinegar is so rich, please use it sparingly. Any left over dressing can be stored in the refrigerator for up to a week. Good excuse to make salad another night this week. Spinach Mediterranean salad Balsamic Feta Vinaigrette
I love a great salad and I never get tired of eating them. One trick I do is change up an ingredient or two to give the salad a twist. Even in a traditional Caesar salad that calls for Romaine lettuce, I like to use baby chopped kale just for a change. The kales doesn’t wilt quickly so it is a great make ahead salad. You should try it! I’m just sayin . . . . wink, wink.
