Sausage and Cranberry Holiday Stuffing

Thanksgiving has to be one of my all time holidays. It is my favorite holiday meal. I absolutely love the combination of foods. The fresh roast turkey, sausage stuffing, mashed potatoes with gravy, cranberry sauce, green beans and corn pudding. This year as I sat eating dinner with my family I took my time and enjoyed each bite. It takes days to put the entire meal together and I wanted to enjoy the fruits of my labor. It was a nice quiet Thanksgiving and I have to say I really enjoyed the small gathering. I didn't feel the pressure of having lots of guests and making sure that everyone was well taken care of. Ted was in charge of the bar and I made most of the side dishes a day or two ahead with the exception of the mashed potatoes. I am picky and like to make those right before serving them. It was a wonderful evening. My neighbor Wally stopped by and we all enjoyed a nice conversation about politics of all things. I think that no matter what political party you are a part of that it is important that we come together as a nation. We are blessed to be part of this great country and as my Grandfather always said - America is the land of opportunity, God Bless America the land of the free the home of the brave. Ingredients
- 12 cups 1 inch bread cubes, white and whole wheat
- 3 eggs, mixed
- 6 tablespoons unsalted butter
- 1 pound sage ground sausage
- 2 cups diced leeks (3 leeks washed and trimmed)
- 2 cups diced celery (3 large stalks)
- 2 Granny Smith apples, peeled, cored and large diced
- 2 tablespoons chopped flat-leaf parsley
- 1 teaspoon rubbed sage
- 1 teaspoon salt
- 1/2 teaspoon freshly ground black pepper
- 1/2 teaspoon garlic powder
- 2 cups chicken stock
- 2 cups dried cranberries
Instructions
- Directions: Preheat oven to 350 degrees F.
- Put the bread cubes on a 13 by 18 by 1-inch baking sheet and bake them in the oven for 7-10 minutes or until dry and slightly toasty.
- In a large sauté pan, melt 4 tablespoons butter and add the sausage, leeks, celery, apples, parsley, sage, salt, pepper and garlic powder.
- Sauté for 10 minutes, until the mixture is fully cooked.
- Combine the bread cubes and cooked vegetables in a large bowl and add the chicken stock and cranberries.
- Mix well and pour into large baking dish.
- Top with the other 2 tablespoons butter and bake for 35 – 45 minutes until the top is lightly browned.
