I just love parties and I love to entertain. I am always looking for easy food to make when I am preparing food for large groups. And this recipe for Chile con Queso, is perfect because it is simple and easy to prepare. Yes, it is true this recipe is so simple you would never believe how simple until you see the recipe. People ask me for this recipe all the time, I am a little embarrassed because it is right out of a can, and all I do is doctor it up with green chile, fire roasted spiced salsa tomatoes and garlic powder. I serve this at all my parties, because it makes a ton (six quarts to be exact) and it is always a huge crowd pleaser. You will also need a 6 quart crock pot to keep it warm for your guests. I cannot say this is healthy in any way except for the chile peppers, but every so often you just have to have a little chile con queso and this recipe will hit the spot, I guarentee it. So here is my easy and super simple recipe for Chile con Queso. Bon Appetit, Cecelia (or maybe I should say Buen Apetito!)
