

- 2 cups tortilla Chips
- 1 can (15 ounce) Hatch Green Chile Enchilada Sauce
- 1/4 cup diced sweet onion
- 1 cup shredded Mexican Cheese Blend
- 1 egg
- Sliced petite plum tomatoes
- Sliced avocado
- Place cast iron skillet over medium heat.
- Spray lightly with cooking oil.
- Add tortilla chips.
- Pour entire can of enchilada sauce over chips.
- Sprinkle onion over chips.
- Sprinkle shredded cheese.
- Add egg and cover with lid.
- Allow to cook until egg is fully cooked about 3 - 5 minutes.
