

- 2 tablespoon olive oil
- 2 tablespoon butter
- 1 medium onion, diced
- 3 garlic cloves, minced
- 2 stalks celery, chopped finely
- 1 large green bell pepper, chopped
- 1/2 teaspoon dried thyme
- 1/2 teaspoon oregano
- 2 large bay leaves
- 1/4 teaspoon cayenne red pepper
- 2 pinches red pepper flakes
- 1 teaspoon dried parsley
- 4 can red beans with juice
- 1 pound andouille sausage, sliced
- 2 tablespoons hot sauce
- 2 tablespoons Worcestershire sauce
- 1 heaping tablespoon tomato paste
- Salt and Pepper to taste
- Cooked white rice
- Fresh chives and parsley, roughly chopped for garnish
- In a large stock pot add olive oil and butter.
- Warm over medium high heat.
- Add onion, celery, bell peppers, and garlic.
- Cook until onion is translucent.
- Add thyme, oregano, bay leaves, cayenne pepper, red pepper flakes, and dried parsley.
- Mix and cook for about two minutes to allow herbs to reach their full bouquet.
- Add 32 ounces of vegetable stock.
- Add beans with juice and sliced sausage.
- Mix well.
- Season with hot sauce, Worcestershire sauce, tomato paste, salt and pepper.
- Cover pot with lid and cook over medium heat for about 45 minutes.
- Taste and adjust salt and seasoning as needed.
- This is slightly spicy - not too spicy.
- You can add more hot sauce, red pepper flakes, or cayenne pepper if you are looking for a spicier dish!
- Be careful to not over do it. Wink, wink!
- Serve over white cooked rice and garnish with fresh parsley and chives

A quick and easy red beans and rice recipe – if you have ever been to New Orleans you would of tried this delicious dish. Simple food made so delicious with seasoning and herbs. It is a Mardi Gras in your mouth – “A dance or celebration in your mouth!” The best part of theis recipe is that it is so EASY! This serves a minimum of 8 large bowls. You can stretch it by serving more rice with each bowl – maybe feeding up to 12. It really depends on your bowl size. Wink, Wink! So my bad – the image name reads slow cooker – as I put the batch in a slow cooker and shipped it off to school to stay on warm for 4 hours! This recipe is a cook top recipe – but it did simmer all morning in the crock pot at school!

You gotta love last minute surprizes – like Mom I need you to make red beans and rice for my French Class tomorrow – we are having a Mardi Gras celebration. So here I go off the the grocery store at 8:30pm last night to buy most of the ingredients – it was a good think I had picked up andouille sausage to make a batch for us this week. Anyway it turned out fabulous! One of the tastiest batches I have ever made. So here you have the quick and easy red beans and rice recipe you will absolutely LOVE! I promise – this is seriously GOOD STUFF!

I have been to New Orleans maybe four or five times in my life time. Just thing about it now makes we want to go back. The food there is absolutely amazing. And if you love great music – this is the city to find it!

1. I recommend eating at some great places: Cafe Du Monde for their world famous beignets and chickory coffee
2. Vist the Central Grocery for the Muffuleta Sandwich
3. Go to Tipatinas for some local music (sometime big names are playing there)
4. Visit the French Quarter for local shopping and amazing antique stores
5. Stroll through the Garden District
6. Check out the Lafayette and St. Louis Cemetery(s)
7. Check out Studio B for some local art
8. Visit Frenchman street of shopping, music and more

Quick and Easy Authentic Red beans and Rice made with andouille sausage. This stuff is amazing. My kids LOVE it! That speaks a lot for this comfort food recipe. After being in the crock pot on warm for several hours is did darken up some and the rice plumped up! I did garnish it with more fresh parsley!
