Brussels Sprout Salad with Apple and Pomegranate - a simple and easy super food salad. Only three main ingredients which include shredded brussels sprouts, fine slices of Granny Smith apples, and fresh picked pomegranate seeds. All topped with a simple whole grain mustard vinaigrette, make this recipe a winner. It plates beautifully so if entertaining your guests will think you spent loads of time making it. Salad
- 4 cups sliced brussels sprouts
- 1 Granny Smith apple, sliced very thin
- 1 cup pomegranate seeds
Dressing
- 1/4 cup olive oil
- 1/4 white balsamic vinegar
- 1 tablespoon whole grain mustard.
- 1 tablespoon honey
- 1/2 teaspoon salt
- pinch of fresh cracked pepper
Instructions
- Wash brussels sprouts, towel dry and finely slice brussels sprouts
- Wash apple, core and slice thinly.
- Layer brussels sprouts, apple and pomegranate seeds.
- For dressing: add olive oil, vinegar, whole grain mustard, honey, salt and pepper into small mason jar.
- Shake until combined.
- Drizzle salad with dressing and serve.
