Spinach Vegan Salad with Lemon Vinaigrette

I am just back from being out of the country for spring break. This first thing I did was go to the grocery store to buy fresh veggies to make a giant salad. I miss my salads because I try to eat a salad a day. And when I have been traveling my body misses all that extra fiber. I made this amazing Spinach Vegan Salad with Lemon Herb Vinaigrette. and it was fabulous. If you are not Vegan or Vegetarian I think chicken or fish would pair well with this salad because of the lemon dressing. I love hearing from you as always! Ingredients
- 1 (6 ounce) bag of organic baby spinach
- 1 cup julienned carrots
- 1 cup garbanzo beans, rinsed
- 1 cup petite tomatoes, sliced in half
- 1 cup cauliflower, roughly chopped
- 1 cup thinly sliced Persian cucumber
- 1 cup chopped celery
- 1 cup snow peas, sliced
- Lemon Herb Vinaigrette
- 1/4 cup olive oil
- 1/4 cup fresh squeezed lemon juice (about 1 medium lemon)
- 2 tablespoons apple cider vinegar
- 1 teaspoon Dijon mustard
- 1 teaspoon Italian seasoning
- 1/4 teaspoon lemon zest
- 1/4 teaspoon garlic powder
- 1 teaspoon chopped mint
- 1 teaspoon sea salt
- Fresh ground pepper to taste
Dressing
- In small mixing bowl add all ingredients and mix well until all ingredients are well blended.
Salad assembly
- In a large platter layer spinach.
- In small rows lay carrots, garbanzo beans, tomatoes, cauliflower, cucumbers, celery and snow peas.
- Drizzle with dressing and serve.
