
Spinach Vegan Salad with Lemon Vinaigrette – this salad is loaded with delicious healthy vegan and vegetarian friendly items like spinach, snow peas, celery, Persian cucumbers, cauliflower, petite tomatoes, garbanzo beans, and carrots. The tasty spinach salad is topped off with a simple lemon vinaigrette made with lemon zest for that extra zing! This salad is the perfect compliment to any meal or can be a light and healthy stand alone meal all on its own.
Spinach Vegan Salad with Lemon Vinaigrette

- 1 (6 ounce) bag of organic baby spinach
- 1 cup julienned carrots
- 1 cup garbanzo beans, rinsed
- 1 cup petite tomatoes, sliced in half
- 1 cup cauliflower, roughly chopped
- 1 cup thinly sliced Persian cucumber
- 1 cup chopped celery
- 1 cup snow peas, sliced
- Lemon Herb Vinaigrette
- 1/4 cup olive oil
- 1/4 cup fresh squeezed lemon juice (about 1 medium lemon)
- 2 tablespoons apple cider vinegar
- 1 teaspoon Dijon mustard
- 1 teaspoon Italian seasoning
- 1/4 teaspoon lemon zest
- 1/4 teaspoon garlic powder
- 1 teaspoon chopped mint
- 1 teaspoon sea salt
- Fresh ground pepper to taste
- In small mixing bowl add all ingredients and mix well until all ingredients are well blended.
- In a large platter layer spinach.
- In small rows lay carrots, garbanzo beans, tomatoes, cauliflower, cucumbers, celery and snow peas.
- Drizzle with dressing and serve.

This salad makes a great side salad for 6 people or you can serve it as a meal for 3 to 4 people. The fresh lemon juice, zest and fresh mint really makes this dressing pop! I never get tired of eating a great salad. I try to change up the vegetables to keep it exciting.

It is still extremely healthy and fits a vegan or vegetarian diet. If you are not a vegan or vegetarian and love a great salad this salad recipe would go well with grilled chicken or fish, because of the lemon dressing.

My daughter still likes it when I make vegan dishes. She has added some meat back into her diet but she is avoiding diary products. (She is so much like me – I must of driven my own Mother crazy as a teen! Sorry Mom if I drove you crazy with all my diet demands.)

I love salad. I do try to eat at least one salad a day. Salads are my go to dinner at least once a week. I try to make them substantial by adding beans for protein and extra fiber. I added some left over snow peas I had and they added a nice crunchy bite to this Spinach Vegan Salad. The Lemon Vinaigrette recipe is a slight variation on one I have made before. Lemon Vinaigrette never gets old. For a twist add you own favorite herbs. Lemon dressings pair well with dill, thyme, and tarragon. Mix it up so it doesn’t get boring. Any of these pair well with chicken and fish.

Adding fresh lemon zest and fresh lemon juice to a vinaigrette can really enhance the flavor. This Lemon Vinaigrette Recipe is one of my personal favorites. I love adding fresh herbs to it to change the flavor slightly. Sometimes I add a few capers to really give it a zing!
