Spicy Red Chile Grilled Chicken

When it comes to chicken there are 101 ways to make it. One of my personal favorites is grilled chicken with a spicy red chile marinade. The red chile in the marinade makes for a spicy bite to this dish. The marinade is my unique creation, I wanted something flavorful that went well with the flavors of the southwest cuisine here in New Mexico. Red chile is a big part of our local fair and goes well with some many recipes. This chicken is great served alone or in a corn or flour tortilla.
The grilled corn and calabacitas pair well with the red chile grilled chicken to make this a complete meal. The grilled chicken here is shown with calabicitas. Calabacitas is a vegetable sauté that uses Mexican squash, yellow squash, zucchini, onion, green chile and sweet corn. It is often topped with pepper jack cheese. The perfect combination!

Ingredients
- 4 chicken breasts, skin removed
- 1 teaspoon red chile powder
- ½ teaspoon cayenne pepper
- 1 teaspoon sea salt
- 1 teaspoon sugar
- ½ teaspoon cumin
- ½ teaspoon garlic powder
- 2 tablespoons melted butter
- 2 tablespoon olive oil
Instructions
- In large zip lock baggie add chicken, melted butter, olive oil and spices. Rotate bag until chicken is fully coated. Marinate up to 24 hours. Grill on medium high heat 10 – 12 minutes on each side. Allow to set 10 minutes before slicing. Serve alongside grilled corn and calabacitas (a Mexican squash sauté).
