Gluten-Free Sausage Frittata

I love one pot meals. They are easy to prepare and serve. I first experienced a Frittata in Italy, I walked into a small coffee shop and they had numerous frittatas all lined up in a glass case, some with meat, some with vegetables, some with leftover spaghetti (I assumed it was leftover spaghetti), I tried several different types and found that they were all delicious.
I make frittatas quite often at Casa Linda. They are great fresh right out of the oven of served as leftovers for lunch with a side salad. They are similar to a Quiche but with no pastry dough so they are gluten-free. I love adding all sorts of ingredients to them – so if you want more vegetables or a different type of meat, it is easy to be creative when cooking a frittata. They are great to use up leftovers like cooked vegetables and meats. No one will ever know, it will be our little secret! So have some fun and try adding your favorite ingredients to your frittata. Ingredients
- 6 ounces hot breakfast sausage
- 2 Yukon gold potatoes,sliced thinly
- 1 large onion; chopped finely
- 10 eggs; beaten well
- 1 tablespoon olive oil
- 1 tablespoon Tabasco sauce
- Salt & Pepper to taste
- ½ teaspoon Italian seasoning
- 1 cup sharp cheddar cheese; shredded
Instructions
- In extra-large skillet cook the sausage until fully cooked. In a separate oven proof saute pan, add the olive, layer the potatoes until the entire bottom of saute pan is covered. Season with salt and pepper. Cover and allow potatoes to cook for about 5 minutes. Add in 2 tablespoons of water and cover pan again. Allow to cook another five minutes. Once potatoes are cooked add the sausage and make sure to cover entire pan with sausage. In separate bowl beat eggs with Tabasco season with salt, pepper, Italian seasoning and cheese. Continue mixing until all ingredients are incorporated. Pour egg mixture over sausage and potatoes. Remove from stove top and place in oven. Cook at 350 for 35 minutes or until cooked and firm in the center of pan.
