Southwestern Chicken Salad Sandwich

This is unbelievably delicious . . . chicken salad with roasted green chile on grilled whole wheat bread with fresh avocados. Yes, we do add green chile to everything in the southwest. The combinations of flavors work perfectly together. The spicy chile with the fresh crunchy celery and a little scallion with that roasted chicken. Yum . . . it is making me want to eat one right now. Purchasing a preroasted chicken make this a quick and easy recipe. This recipe is perfect for a romantic picnic in the park. (Hint, hint - Mother's day is coming up very soon.) This is a new twist on my old standby chicken salad and it was wonderful. I hope you enjoy it, I would love to hear from you. Ingredients
- 8 sliced whole wheat bread
- 2 cups chopped chicken
- 1/2 cup chopped celery
- 1/4 cup chopped scallions
- 1/4 cup mayonaise
- 1/4 teaspoon cumin
- 1/4 cup chopped green chile
- 1/2 teaspoon sea salt
- 1 avocado, sliced
- 2 tablespoons melted butter
Instructions
- In a mixing bowl add chopped chicken, green chile, mayonaise, cumin, sea salt, scallions, and celery mix until well blended. Set aside and butter and grill bread lightly on both sides. Layer salad onto grilled bread and garnish with avocado slices and serve.
