Crock Pot Green Chile Chicken Posole

Who doesn't love a great crock pot recipe? Posole is one of those great crock pot foods. Here in New Mexico we eat posole typically with pork and red chile, this recipe is not a traditional New Mexican recipe. I used green chile and chicken. It makes a great meal for the entire family. I love easy meals that are cooking all day while I am away at work. There is nothing like walking into a clean kitchen and smelling a delicious pot of slow cooked posole with roasted green chile, along with the combination of onion, garlic, oregano and cumin. My enitre house smelled like a culinary delight, the combination of herbs and chile really make for a fragrant dish. And no giant mess to clean up, a one pot wonder. I love that! Ingredients
- 1 1/2 pounds chicken breast, cut into pieces (3 -4 medium chicken breasts)
- 1 small onion, diced
- 1 (32 ounce package) frozen posole, thawed and rinsed
- 2 garlic cloves, minced
- 8 cups chicken stock
- 4 cups water
- 1 tablespoon salt
- 1 tablespoon dried oregano
- 1 teaspoon cumin
- 2 cups mild chopped green chile
Instructions
- Add all ingredients into crock pot.
- Mix well.
- Cook on low heat for eight hours.
- Serve into individual bowls. (About 2 cups per person.)
- Garnish with fresh lime wedges, cilantro, fresh jalapeno slices, and avocado.
- Enjoy!
