Simple Spaghetti with Marinara Sauce

I have fresh herbs growing out of my ears . . . just kidding of course. But seriously, my herbs are in abundance this year. My tomatoes on the other hand are not doing so well. I developed grubs in my garden. The poor tomato plants look pathetic as ever. So not extra tomatoes for homemade spaghetti sauce this year. I used canned crushed tomatoes instead . . . and the sauce was fabulous. I added tons of fresh herbs like basil, rosemary, oregano and flat leaf parsley to this simple marinara sauce. Now worries for you that don’t have a fresh herb garden, dried herbs work great in this recipe. An easy substitute for the fresh herbs is dried Italian seasoning. A couple tablespoons will spice up this recipe perfectly. I love simple Italian dishes like spaghetti with marinara sauce. Italian food is a favorite at Casa Linda. This makes a quick and easy weeknight meal. Perfect when you don't have a lot of time to cook a big meal. It is hard to believe we are in our final weeks of summer. Ingredients
- 2 tablespoons extra virgin olive oil
- 4 ounces chopped pancetta
- 1 cup sweet onion, chopped finely
- 2 garlic cloves, minced
- 1/2 cup red wine
- 2 (28 ounce) crushed tomatoes
- 1/2 teaspoon red pepper flakes)
- 1/2 teaspoon sea salt
- Black pepper to taste
- 1 cup basil, roughly chopped
- 2 tablespoon fresh flat leaf parsley, chopped
- 1 teaspoon fresh rosemary, chopped
- 1 teaspoon fresh oregano, chopped
Garnish
- Parmesan Cheese
- Fresh Basil leaves
Instructions
- In deep pot sauté olive oil, pancetta, onion, and garlic over medium heat.
- Cook until the onion is translucent 2-3 minutes.
- Add wine and cook about 5 minutes until the wine is evaporated.
- Then add tomatoes to pot.
- Season with red chile flakes, salt, pepper, and fresh herbs.
- Mix well.
- Cook for about 5-7 minutes.
- Meantime cook pasta according to package directions.
- Reserve 1/4 cup of cooked pasta water to add to serving dish.
- Toss pasta and sauce together with pasta water.
- Garnish with parmesan cheese and fresh basil.
- Serve and enjoy!
