Simple Chicken and Rice Soup

I have said this before . . . soup is a favorite year round at Casa Linda. I can eat soup in the summer as well as the winter months. Soup is one of those ultimate comfort foods. This spring we have had the flu and the Rhino virus running rampant in my house. I think allergies might have something to do with it. It seems that allergies in New Mexico are getting worse. I know that sounds absurd, but even I am suffering from allergies this year. I am cutting back on gluten and sugar. (That is for my entire family.) I am hopeful that this will help. Sugar weakens your immune system and gluten cause inflammation. So by staying away from sugar – I hope my children’s immune systems will get back to normal soon. The gluten surely doesn’t help with allergies. I am not a doctor, but I do notice when I stay away from gluten in general I feel better and my allergies are not nearly as bad. I picked my son up from school again today and he is sick. Let's hope this yummy homemade Chicken and Rice Soup is the perfect cure. That along with rest, zinc, vitamin C and lots of fluids. Ingredients
- 2 tablespoons butter
- 1 cup onion, chopped
- 2 celery stalks, sliced
- ½ teaspoon sea salt (more if needed)
- 3 carrots, sliced
- 1 tablespoon dried parsley
- 1 teaspoon lemon pepper
- 1 teaspoon fresh thyme
- 1/2 teaspoon garlic powder
- 2 quarts chicken stock
- 1 cup rice
- 1 cup water if needed
- 4 cups roasted chicken, chopped
Directions
- In large pot melt butter over medium heat. Add onion and celery. Season with salt. Sauté for about 5 minutes. Then add carrots. Season with parsley, lemon pepper, thyme, and garlic powder. Mix well. Add chicken broth and rice. Mix. Add water if needed. Cook over medium high heat until all vegetables are tender about 25 minutes. Add chopped chicken and taste. Adjust salt and pepper as needed. Serve immediately.
