Breakfast Salad Bowl - Canadian Bacon and Steamed Egg

Breakfast salad bowls seem to be all the rage these days. I see them everywhere on menus. I love my salads so this is a real winner in my books. This is my very own creation and it an easy to prepare. The best part is that you only dirty one pan. I think you will love this extremely healthy breakfast idea - "Breakfast Salad Bowl with Canadian Bacon and Steamed Egg." Since low carb seems to be a theme in my household lately this is the perfect breakfast meal. Especially for my husband and me. The kids still enjoy bread and their fair share of carbs, however, I am really watching the carbs. This fifty something kind of stinks, you have to work out more and eat less to maintain your weight. With all the cooking I was doing for the cookbook, I managed to gain an extra 10 pounds, now this means I need to lose even more weight. I think it is time for me to join the gym and really buckle down. Eating things like breakfast salad bowls will help too. I hope you enjoy my latest creation. This is the ultimate healthy breakfast. Ingredients
- 6 ounces mixed greens (power greens)
- 2 tablespoon extra-virgin olive oil
- 2 cup sliced mushrooms
- 2 cups broccoli florets
- Salt and pepper to taste
- 4 slices Canadian bacon
- 4 eggs
- 1 tablespoon water
- 1 cup heirloom tomatoes
Instructions
- Divide greens into 4 bowls. In a large non-stick skillet add olive oil, mushrooms, and broccoli. Season with salt and pepper. Saute until mushrooms and broccoli are cooked about 4-5 minutes. Then add the Canadian bacon to pan and warm on each side for about one minute. Remove bacon and place in center of mixed greens. Spread mushroom and broccoli throughout the four bowls. Add eggs in the same pan along with 1 tablespoon of water. Cover skillet with lid and cook until egg white is fully cooked about 2 -3 minutes. Season with salt and pepper. Serve egg over Canadian bacon. Add tomatoes and serve. Season with additional salt and pepper as needed.
Notes
- TIP: When steaming eggs it helps to cover the skillet with a lid, this help the egg to cook evenly.
