Salsa Verde

I love spicy food especially fresh salsa, it is just so perfect . . . and in abundance here in the land of enchantment. My husband Ted (Pancho) calls it the land of entrapment because he feel in love with a native New Mexican and never left the state after that! LOL - A native New Mexican is not necessarily Native American Indian, for those of you that don't live in the states. I am a second generation American my grandfather was from Greece. Despite my ethnicity, one of my favorite spicy foods is salsa! The fun thing about great salsa is it is fun to reinvent it and make the recipe just the way you like it. Personally I don't like a ton of garlic or onion and I do like a little bit of heat, well more than just a little! This is one of the best SALSA recipes I have created, it might have something to do with roasting the tomatillos and jalapenos until they were perfectly charred. Ingredients
- Salsa Verde
- 6 fresh tomatillos; peeled
- 1 cup water
- 3 jalapeño peppers
- 1 garlic clove
- ½ small onion, chopped in large chunks
- 1 bunch cilantro; leafs only
- ½ teaspoon salt
- ½ lime; fresh squeezed
Instructions
- Heat oven on broil, then on a lightly greased cookie place the onion, the jalapeños, the garlic and the tomatillos. Broil turning often until everything has a nice brown/black color. About 5 - 7 minutes. Allow to cool slightly. Pour half of tomatillos, onion, jalapeños garlic, onion, cilantro, salt and lime juice. Pulse until all finely chopped. Then add the remaining tomatillos until chopped to medium consistency. Serve immediately or keep in refrigerate for up to two days in air tight container.
Notes
- TIP: I do not use much salt because the tortillas chips have plenty. Feel free to add more if you like more salt!

Awesome Salsa Verde!! I had my grill going for steaks so I roasted my tomatillos, Jalapenos and a head of garlic on it then made the salsa according to the recipe. It is good on everything.
