Chicken Tacos with Salsa Verde

I am loving the warmer weather right now and am finding myself wanting to spend more time outdoors. I really enjoy gardening and have a great herb and vegetable garden. I have posted many picture of facebook if you are interested in seeing some of my herbs, flowers etc. I also love flowers and start many of my plants from seed. It takes about an hour each day to water and weed my garden, I find it relaxing and peaceful. Since I am trying to make more time to garden, I am trying to make meals that are easy to prepare and yet very satisfying for my family. (They are a little picky now, since I have spoiled them, if the truth be known!) So in trying to save time, I have been playing around with pre-roasted chickens and came up with this quick dinner option. The only thing that took a little time was making the salsa verde. Overall it still only took about 35 minutes in all. I may work a little faster than most so give it 35 - 45 minutes. Not bad considering we had left over chicken and salsa that I used on nachos the next night!

Ingredients
- Roasted Chicken, sliced
- 12 corn tortillas
- 1 1/2 cups Fiesta Cheese Blend
- Salsa Verde (see previous post for recipe)
- Guacamole (see recipe above)
Instructions
- Slice roasted chicken and set aside. Place corn tortillas on lightly greased cookie sheet and layer chicken and cheese. Under a preheated broiler warm tacos until cheese is melted about 3 - 5 minutes. Garnish with Guacamole and Salsa Verde. Serve immediately
