Best Ever Ham & Cheese Breakfast Casserole

This is my newest breakfast creation “Ham & Cheese Breakfast Casserole” for all intensive purposes it is a “Frittata” the word frittata is a based on and Italian dish which translates to “egg-cake”. And an egg cake it is! The casserole or frittata is basically a crust free quiche, without the added milk. The dish can have a variety of vegetables, meats, cheeses and is known throughout Europe to be a wonderful way to use up leftovers, including pasta from the night before. Frittatas are a simple and healthy option for breakfast, brunch or lunch. I love them for the simple fact that they are a one pan wonder meal and you can make them light or in this case heavy and loaded with has browns, ham, scallions and cheddar cheese. This was what we had for Sunday breakfast and it was delish! I encourage you to try the recipe. You will want to make it again and again. Happy cooking.

Ingredients
- 2 tablespoon vegetable oil
- 2 cups prepared tatter tots
- 8 eggs (beaten)
- 1 1/2 cups chopped ham
- 2 scallions, sliced
- 1 1/2 cups sharp cheddar cheese
- ¼ teaspoon sea salt and
- ¼ teaspoon fresh ground pepper
Instructions
- In small 10 in sauté pan add the vegetable oil and tatter tots. Allow them to warm through and start to form a light golden crust. Mean time beat eggs in a separate mixing bowl and set aside. Check hash browns and flip and allow the second side to brown, as soon as you see a nice golden brown crust add the ham, scallions, and cheddar cheese. Pour the egg mixture over the potato and ham mixture and transfer into a 400-degree oven and finish cooking for 12 - 15 minutes until the top of the frittata is lightly golden brown. Allow the frittata to set for 3-5 minutes before cutting. Gently loosen frittata edges with a spatula from the pan, slice like a pie and place frittata onto a serving plate. Serve immediately.
