Pico de Gallo

Fresh Pico de Gallo is one of my favorite fresh salsa snacks. It is a traditional Mexican Salsa. In Mexico they serve it with everything from eggs to chicken tacos. The refreshing combination of tomatoes, onions, jalapeno peppers, cilantro and fresh squeezed lime make this salsa irresistible. I serve it as a side with eggs for breakfast or on beef and chicken tacos. It is the perfect healthy snack paired with tortilla chips. Pico de Gallo goes well with any southwestern dish. Ingredients
- 4 Roma tomatoes ripe but firm
- 1 small white onion
- 2 jalapeno peppers, deseeded and chopped
- 1 cup fresh cilantro leaves
- 1 lime freshly squeezed
- pinch or two of salt
Instructions
- Chop tomotoes, onion, jalapeno peppers, cilantro leaves and combine all ingredients in a mixing bowl, season with salt and fresh lime juice. Mix gently and serve.
Notes
- For smaller poritons you can cut in half. It may be stored for one day in air tight container in the refridgerator. The leftovers are great mixed with scrambled eggs and topped with cheese.
