Green Beans with Mushrooms and Red Peppers

I am always trying to get my family to eat more vegetables. Creating new recipe ideas and combinations is one of my passions. More than ever I believe that it is important to teach our children the importance of eating healthy food. I enjoy teaching them that in order to stay healthy you need to make good food choices. I try to always serve one or two vegetables or a side salad with every meal I make. Here is a new and delicious recipe that is healthy and colorful. It is easy and simple to prepare.

Ingredients
- 2 cups green beans
- 8 ounce sliced mushrooms
- 1 red bell pepper, sliced
- 1 shallot, chopped finely
- 2 tablespoons extra virgin olive oil
- pinch or two of garlic powder
- Sea Salt and Pepper to taste
Instructions
- In a large saute pan add olive oil and chopped shallots. Allow to cook until the shallots are translucent about 2 - 3 minutes. Add in mushrooms, red peppers and green beans. Season with garlic powder, salt and pepper. Saute for about 10 - 15 minutes over medium heat or until the green beans are cooked to your liking. I like mine slightly crisp so 10 minutes is about perfect.
Notes
- When making this dish you could use yellow or orange bell peppers, or a combination of several colors to make this dish very colorful.
