You have got to love a great easy appetizer. I am always looking for something easy to serve or take to a party. This recipe for Roasted Red Pepper with Goat Cheese is a delicious and tasty appetizer that your guests will be sure to love. I served it over the holiday weekend and everyone was raving about it. It past the test, especially when everyone asked for the recipe. I thought you might like the recipe too! I hope you enjoy my newest creation.

Roasted Red Pepper and Goat Cheese
4 ounces goat cheese
½ cup chopped roasted red peppers
1 teaspoon prepared pesto
1 teaspoon white balsamic vinegar
2 tablespoon extra virgin olive oil
1 teaspoon fresh chives
Pinch of salt
Pinch of garlic powder
Pinch of fresh ground black pepper
Pinch of red pepper flakes
Baguette, sliced and toasted
Directions: Mold goat cheese into small log and wrap in plastic wrap. Refrigerate for 2 hours. In a mixing bowl combine roasted red peppers, pesto, salt, pepper, garlic powder, red pepper flakes, vinegar and olive oil. Mix until combined. Refrigerate mixture for 2 hours. Pour roasted red pepper mixture over goat cheese log and serve with the toasted baguettes.
