Homemade salsa is so easy to make and so much better for you. The sodium in many prepared salsas can be extremely high. This simple easy to make Salsa Pequin is a true winner! It is loaded with flavor and spice. The fresh cilantro and lime juice are what really make this taste fresh and wonderful. In New Mexico we make all types of salsa and this is one salsa that you will love and want to make time and time again! It is a great summer snack or great as an easy appetizer. Bon Appetit, Cecelia

Ingredients
- 2 (12 ounce) cans diced tomatoes
- 1 Clove of Garlic
- ¼ cup diced white onion
- 1 cup Cilantro (leaves only)
- 6 chile pequin (Hot)
- 2 Tablespoons fresh Lime Juice
- Salt to Taste
Instructions
- Over medium heat toast about 6 chile pequin pods in a small saute pan.
- Until lightly toasted about 1 - 2 minutes.
- Be careful once they begin to toast they are nearly ready.
- They can burn easily. Watch carefully while toasting.
- After toasted remove stems. Leave the seeds - there is a lot of flavor in the seeds.
- Add one can of diced tomatoes, garlic, onion and and toasted chile into food processor.
- Chop until well blended, about one minute.
- Add cilantro, salt, lime juice and second can of tomatoes.
- Pulse until chunky.
- Serve immediately or you can store for several days in refrigerator.
- Serve with chips, tacos, tostadas or over grilled meat.
Notes
- For a more mild salsa start with 2 or 3 chile pequin. Then add more to bring to desired taste.

I have never tried that combination. But it sounds interesting. If you would like try one of my salsa recipe and add some lavender, make sure you use food grade lavender or food grade lavender oil. I would use it sparingly until you see if you like that particular combination.
