Gluten Free Navy Bean Soup with Hatch Green Chile

Comfort food at its best. This simple and easy White Bean Chili Verde will have dinner on the table in under sixty minutes. Made with navy beans, potatoes, sweet corn and for an added kick spicy Hatch Green Chiles. Garnish with tortilla chips and fresh lime for a tasty finish. For an added bonus this recipe is gluten-free.

Ingredients
- • 2 tablespoons olive oil
- • 1 small onion, diced
- • 2 garlic cloves, minced
- • 2 stalks celery, finely chopped
- • 3 small russet potatoes, diced
- • 2 (4 ounce) can Hatch Diced Green Chiles (hot)
- • 2 cups frozen sweet corn
- • 2 cups salsa verde
- • 1 cup cilantro leaves, roughly chopped
- • 2 (15 ounce) cans Navy beans with juice
- • 32 ounces vegetable broth
- • 1 tablespoon masa (ground corn as thickener)
Garnish
- • Tortilla chips for garnish (Blue Corn)
- • Slice avocado for garnish
- • Cilantro leaves for garnish
- • Lime wedges for garnish
Instructions
- In a large stock pot add cooking oil, onions, garlic, celery, and potatoes.
- Sauté for about 5 minutes on medium high or until onion is translucent in color.
- Add diced green chiles, sweet corn, salsa verde, cilantro leaves, navy beans, and vegetable broth and masa. Mix until masa has dissolved completely.
- Cover and reduce heat to medium. Continue to cook until potatoes are tender approximately 30 minutes.
- Serve into individual bowls.
- Garnish with tortilla chips, avocado, cilantro leaves, and a fresh lime wedge.
