Penne Pasta with Pancetta

Pasta is one of my go to meals, especially when I am not sure what to make for dinner. Here at Casa Linda, the cook, that’s me, can never go wrong with making pasta for dinner, it always make my kids happy. My husband Ted like’s pasta, but he likes his pasta with meat so I added a little pancetta in the sauce to appease him. One think I also stock in my pantry is prepared spaghetti sauce, I buy a few varieties, but I do like Trader Joe’s, they have several to choose from and I like them all. I also purchase Marcella wine there, it is great in spaghetti sauce or with mushrooms, I just love the stuff! This recipe for “Penne Pasta with Pancetta” is perfect with a side salad, I now have over 6o to choose from on my web site with homemade dressings that complement each one. Ingredients
- 1 pound Imported Italian Penne Pasta
- 1 cup chopped Italian pancetta
- 1 (24 ounce Jar prepared Spaghetti Sauce)
- 2 tablespoon Extra Virgin Olive Oil
- 1 (12 ounce) can petite diced tomatoes
- ½ cup chopped onion
- ¼ cup Marsala wine
- 2 cloves garlic
- 1/2 cup Parmesan cheese
- 1 teaspoon Italian Seasoning
- 1 teaspoon dried basil
- ½ teaspoon dried oregano
- ½ teaspoon dried parsley
- Pinch of crushed red peppers
- Salt and black pepper to taste
Instructions
- In a sauté pan, add olive oil, pancetta, onion, bell pepper and garlic. Sauté for 2 -3 minutes, watching carefully not to burn the garlic, add the diced tomatoes, the spaghetti sauce, the Marcella wine, herbs and spices. Season with salt and pepper. Simmer for 20 – 30 minutes. Meanwhile cook the pasta according to package directions. Drain penne pasta and serve with spaghetti sauce. Garnish with Parmesan Cheese and enjoy!
