Carne Adovada Hash

Here in New Mexico we love our chile, red chile, green chile, you name it, and we create all sort of interesting recipes with our beloved chile peppers. This recipe is an easy take on breakfast using some left over carne adovada (pork marinated and cooked in a red chile sauce). I wish I could say I created it, but if the truth be known, I eat at one of my old college hang outs, the Frontier Restaurant. It is a great way to eat breakfast hash, smothered with lots of red chile, pork and topped with some sharp cheddar cheese. This stuff is amazing. You will want it time and time again. Ingredients
- 4 cups hash browns, frozen
- 2 tablespoons chopped onion
- Salt and Pepper to taste
- 2 tablespoons cooking oil
- 4 ounce cheddar cheese, grated
- 2 cups carne adovada
Instructions
- Add cooking oil into a large non-stick fry pan. Heat over medium-high heat until oil is hot, but not smoking about 1-2 minutes. Add hash brown, season with salt and pepper. Cover with lid and cook about 4-6 minutes until hash browns are crispy, flip over and cover and allow second side to cook about 5 minutes. Add chopped carne adovado, mix well and continue to cook about 5 minutes on medium-high heat. Garnish with cheddar cheese and serve.
