Wild Blueberry French Toast Casserole

This is a slightly new version of an old recipe I made a few years back. I has some of the same ingredients but I added these amazing frozen wild organic blueberries I found in the frozen food section at our local Trader Joe's grocery store. Because the blueberries were organic and wild they were super small, about the size of a pea. I tasted one before I poured them into the French Toast Casserole and they were super sweet but yet slightly tart, and I love things that are slightly tart. So I think they are a perfect match for this recipe, with the added maple syrup it really balances out that extra sweetness. I made some fresh squeezed orange juice for the kiddos, and I saved a little and made mimosas for the adults. I cut up some fresh fruit to serve along with the french toast and we were good to go. This Blueberry French Toast Casserole makes the perfect brunch recipe or special occasion weekend breakfast.I love one dish recipes, it makes the clean up so much easier. Ingredients
- Loaf of Sourdough Bread, cut into cubes
- 10 eggs, beaten well
- 2 teaspoons vanilla extract
- 1 teaspoon cinnamon
- 1 cup wild frozen blueberries
- 2 cups whole milk
- ¼ cup dark brown sugar
- ½ cup Maple Syrup
- 3 tablespoons butter
- ¼ cup powdered sugar for garnish
Instructions
- Cut bread into bite size pieces. Place into a 9 x 13 casserole pan, layer frozen blueberries into the pan. Beat eggs well, then add milk, vanilla and cinnamon. Mix until well blended. Pour over bread and press bread down so it all can absorb the egg mixture. Cover casserole pan with plastic wrap and store overnight in refrigerator. Take out one hour before ready to bake, allow the pyrex to warm, this will prevent it from cracking, bake in 375 degree oven for approximately 45 minutes. In a small bowl melt the butter in the microwave for 10 – 15 seconds and add in the maple syrup. Before serving microwave the syrup and butter mixture and drizzle over the casserole. Cut casserole into 12 serving pieces, drizzle with syrup and top with powdered sugar.
Notes
- TIP: Regarding the sourdough bread, loaf sizes range in size, this was a large loaf, I used all but about 4 – 6 slices, depends on the depth of your casserole dish. See images below for a guide.
