Tuscan Turkey Soup

Left over turkey is the perfect for a great pot of soup. I like to boil the entire turkey carcus and all, I then remove the meat, I discard the skin and bones. I strain the broth and freeze in smaller portions so I can have broth on hand for future soup making. This Tuscan Turkey Soup is my newest creation, I wanted something delicious and always have a grand time coming up with ideas for that left-over turkey!
I had some Italian egg noodles and kale and thought of making an Italian Tuscan Style Soup. The crushed red peppers and garlic really made this recipe fabulous. This recipe can be made anytime using turkey or chicken. I would love to hear from you . . . much love for all your beautiful and inspiring comments.

Ingredients
- 2 cups turkey; shredded (pre-roasted turkey with no skin and de-boned)
- 2 quarts chicken stock
- 4 sweet onion; chopped finely
- 4 celery stalks; with greens sliced finely
- 3 carrots; sliced finely
- 2 cups chopped kale
- ¼ teaspoon garlic powder
- 1 teaspoon fresh thyme
- 1 teaspoon fresh parsley
- 1 sprig fresh rosemary
- 2 small pinches of red pepper flakes
- 4 tablespoons butter
- 8 ounces home-style egg noodles
- Salt and pepper to taste
- Shredded Parmesan cheese for garnish
Instructions
- In large pot melt butter add carrots, celery, and scallions medium low heat; sauté for 5 minutes. Then add chicken broth, kale and herbs; turn up to medium high heat and cook until all vegetables are tender about 30 minutes, add turkey and noodles cook another 20 minutes on medium heat, or until noodles are cooked. Remove rosemary sprig and garnish with parmesan cheese. Serve immediately
Notes
- For perfectly cooked noodles make sure to keep soup on medium boil. This will keep the noodle intact and keep them from sticking together. Buy a high quality egg noodle you can find imported Italian egg noodles in many grocery stores. Also watch carefully do not over-cook the noodles, I turn them off before they are fully cooked because they have a tendency to soften in the broth.
