Summer's Best Apricot Crisp

I don't know about you, but the summer heat has me wishing for some cooler weather. My garden is producing much earlier this year and the fruit trees are already producing ripe fruit. My neighbor gives me some of his fresh apricots around the Fourth of July every summer. I look forward to receiving them and get excited about making something amazing. He sent me a note a few days ago saying the apricots on his tree were ready to pick. That is couple weeks ahead of schedule. Normally I bake an apricot pie, but this year I made an amazing Apricot Crisp. There are some desserts that you never get tired of and a great fresh fruit crisp is one of them. Crisps remind me of a delicious homemade pie except better! It is something about the oats giving it a nice crusty texture. And the fact that I don't like real sweet desserts. So a nice fresh fruit dessert is perfect. Even if the fruit is slightly tart the ice cream fixes that issue. I have said it before . . .when I make a great fresh fruit crisp it is good the next morning for breakfast, just warm it up in the microwave for a 15 seconds or so and you have an amazing breakfast, especially with a cup of fresh brewed coffee and minus the ice cream of course. Ingredients
- 4 pounds ripe apricots, seed removed and sliced in half
- 1 teaspoon grated orange zest
- 1 teaspoon grated lemon zest
- 2 tablespoons freshly squeezed orange juice
- 2 tablespoons freshly squeezed lemon juice
- 1/2 cup granulated sugar
- 1/4 cup all-purpose flour
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
For the topping
- 1 1/2 cups all-purpose flour
- 3/4 cup granulated sugar
- 3/4 cup light brown sugar, lightly packed
- 1/2 teaspoon salt
- 2 cups old-fashioned quick cook oatmeal - save 1/2 cup to sprinkle on top
- (2 stick) unsalted butter, melted for 45 seconds on high in microwave
- Garnish: Vanilla bean ice cream
Instructions
- Preheat the oven to 350 degrees F.
- Put the apricots in a large mixing bowl and add the lemon and orange zests, fresh squeezed juices, sugar, flour, cinnamon, and nutmeg.
- Toss well and then pour into a 9” x 12” x 4” baking dish.
- For the topping: combine the flour, sugars, salt, oatmeal, and butter a large mixing bowl and mix until the mixture is well blended.
- Sprinkle over the fruit, covering the fruit completely.
- Add the 1/2 cup of oat to the top and place the baking dish on a sheet pan and bake for 45 minute or until the top is brown and the fruit is bubbly.
- Serve warm with vanilla ice cream.
Notes
- More GOOD STUFF: Apricots are a great source of vitamin A, vitamin C and potassium. They are also a great source of fiber. One little apricot only has 17 calories.

Oh yeah! Totally pinning this–our neighbor’s apricot tree is ripe! They JUST hollered over the fence to come pick heaps. Yum! Now I know what to make besides the fruit leathers we always make.
