If the truth be known – I use leftovers in everything from omelets to pasta and salads. I had one perfectly ripe peach and two leftover smoked chicken breasts and I thought to myself “what can I make with these?” Well you know I LOVE SALADS. So I cooked some quinoa – my very favorite new ingredient. And I had a bag of baby organic spinach and a small baggie of toasted pine nuts also left over from a previous dish I made. So I layered the spinach added the quinoa, cut up the chicken and diced the peach, sprinkled the pine nuts and drizzled the honey mustard dressing. WOW – I even impressed myself. Spinach with Quinoa, Smoked Chicken and Grilled Peaches – The combination of flavors was heavenly. Well to those of us that love food anyway . . . . I hope you find it heavenly too!
Honey Mustard Dressing
¼ cup olive oil
¼ cup apple cider wine vinegar
2 tablespoons honey
1 tablespoon whole grain Dijon mustard
½ teaspoon salt
Fresh ground pepper to taste
Dressing: In small mixing bowl add all ingredients and mix well until all ingredients are fully incorporated.
Grilling the Peach: I grilled the peach for about 3 minutes on medium high. (Please watch closely you don’t want it to burn – the natural sugar in the peach can burn quickly)
Salad assembly: layer spinach, quinoa, chicken, peaches and pine nuts, drizzle with honey dressing, toss and serve immediately. Great served with a crusty loaf of bread.

You are right this is heavenly, the dressing really topped it. I made it tonight, of course no fresh peaches here so I grilled caned ones, I liked I can images what fresh would taste like. I have plenty of the ingredients left over.I stored them separately and will be able to make a couple more throughout the week. Love it. Do you know how I can pin this recipe to pinterest?

Hi June. I will post it to Pinterest and let you know when you can share it. Glad to hear you are trying the recipes. And the quinoa and chicken can store up to 3 days and you can use them on the same salad or trying them in another salad! I usually make 2 cups quinoa – which makes four cups and use them in several salad during the week. I have to feed a family of four so it helps having extra to use later. Good job on substituting can peaches – that is very clever.
